depends on your tastes. lots of recom. but do you prefer a nutty taste, a bitter taste? personally i would start smooth soft mild cheese. provolone, havarti, edam maybe or fontina. but could you also describe tastes?

For cheese suggestion i will suggest Monterrey Jack, that’s my favorite to put on burgers and stuff. I think it pairs well with things and isnt too strong. If u try Cheddar, know that SHARP cheddar is different than not sharp
