Currently VOD gang but OtsuGibby!! As for your question at 1:21:11, the one food that really takes me back will have to be French bean and carrot stir-fry paired with rice and fried/grilled milkfish. As a kid, I hated veggies up until fifth grade when I had that stir-fry for the first time. The reason why I hated them was because as a kid the only veggie dish I had was soup with chopped veggies, but when I tried that aforementioned combo it instantly became a favorite. That combo of savory stir-fry paired with warm rice and the delectable milkfish meat and stomach fat plus sambal is one that I still think of to this day. To answer your question at 1:04:32, it really depends because Indonesia is a big country with a wide variety of foods to choose from! The must-try and probably one of the easiest finds will have to be rendang, a slow-cooked curry-like dish from West Sumatra. Most places in ID (the people of West Sumatra, specifically those from the Minangkabau ethnic group are known to emigrate to various places) will serve it with beef, but other meats like chicken, duck, buffalo, and even deer are also used in lieu of beef. Nasi goreng (fried rice), satay, and bakso (a popular noodle soup with meatballs with south Chinese origins) are popular too thanks to hawker/street-food culture. I also would recommend gado-gado, an East Javan salad rich in history consisting of fresh vegetables, hard-boiled egg and lontong (another type of Indonesian rice cake) paired with a sweet-and-spicy peanut sauce dressing. This type of "veggie (fresh or blanched) + peanut sauce" combo can be found in many regions of Indonesia, specifically in the island of Java under different names with different additions including tempe and tofu. Pork-based cuisines aren't as common due to the large Muslim population but you can still find them in Balinese and Chinese-Indonesian cuisines, as well as Batak and Toraja cuisines (ethnic groups from north-central Sumatra and South Sulawesi, respectively) or in any non-Muslim communities. However, as someone born and currently living in South Sulawesi, if you are given the chance do try out South Sulawesi cuisine! We have a lovely selection of seafood and meat-based foods, one of which being this thing called sop saudara (translation: "brotherly soup"), a soup with various cuts of beef or buffalo often served with rice or buras, a rice cake cooked with coconut milk wrapped in banana leaf (another very nostalgic food for me). We also have fried plantains served with a side of sambal, which some people in Indonesia find perplexing because the ID word for plantain and banana is "pisang", which is associated mostly with its latter English counterpart and often paired with sweet toppings like chocolate sprinkles instead. We do have our own versions of sweet banana/plantain snacks: pisang epe' (banana/plantain grilled over fire paired with sweet toppings like brown sugar syrup, condensed milk, chocolate sprinkles, or durian), and its more famous cousin pisang ijo (a steamed banana/plantain wrapped in a green, pandan-flavored mochi-like dough topped with a sweet coconut milk-based gravy paired with a pink banana syrup and condensed milk, topped with ice). Most of these would be best eaten at the origin, i.e. South Sulawesi, but if you were to visit ID chances are you might go to Jakarta instead. Fortunately, Jakarta is its own melting pot of different cultures so you should still be able to find spots that serve South Sulawesi cuisine with flavors as close to as possible to its original counterparts. I could go on and on and on when it comes to this topic, but if you haven't seen it I highly recommend checking out OTR Food & History's series on Indonesian food, starting with "What Is Indonesian Food?". While the setting of most of the series is located in Medan, North Sumatra, I still recommend checking it out because it showcases not only common ID foods but also regional specials!
